The importance of sustainable food
At Poldino Restaurant we value each stage of the journey that food takes before reaching our table, since our restaurant is located right in the heart of San Rossore Park and has always had deep ties with people and the environment.
Eating properly not only improves our health, but the entire planet.
This is why grocery shopping is the most important part of our job.
We know first-hand the history of the raw materials we use in our kitchen: strong ties of friendship connect us to local farmers who grow vegetables and local producers of flours, meats, wines and beers. Each dish expresses the authenticity of the land in which the food grows.
At Poldino we offer fresh, seasonal and local dishes characterised by rich flavours typical of wild boar and fallow deer, pecorino cheese and a local variety of honey called “miele di spiaggia”, along with agricultural products from the best farms near Pisa.
Some dishes might not be available due to limitations in agricultural production.

Pecorino Cheese Tagliere from Tuscany
A selection of pork cold cuts from Farm Stassano in Peccioli: prosciutto crudo, lonzino (prosciutto made with pork loin), citrus fruit soppressata (Tuscan salame made with boiled pork meat), capocollo (prosciutto made from the neck of the pork), finocchiona (Tuscan salame made with chopped pork meat and fennel seeds).
