A Sustainable Menu Between Taste and Respect
In the heart of a Regional Park and with a history of profound ties between people and the environment, we cannot help but value every stage of the journey food takes before reaching our table.
Choosing to eat well affects not only our own health, but that of the entire planet. This is why we consider grocery shopping the most important act of our work. The raw materials we bring to the kitchen have a history we know personally: strong bonds of friendship bind us to the hands that produce the vegetables, flours, meats, wines, and beers, and every dish speaks of the authenticity of the land where the food is grown.
The intensity of wild boar and deer, of sheep's cheeses and beach honey
and the authenticity of agricultural products from the best companies in the Pisa province, create fresh, seasonal, and local dishes that arrive on the table natural and festive.

Respect for Seasonality
Our cuisine strictly follows the rhythms of the earth, offering a streamlined selection of five carefully crafted dishes for each course. This approach allows us to work only with the freshest ingredients and exclude greenhouse produce.
This is why our menu is constantly revised and updated, to reflect the seasons, offering guests the certainty of consuming only what nature spontaneously provides.
The Sustainability of Food
In the heart of a Regional Park, we consider shopping the most important part of our work. Our raw materials have stories we know personally: strong bonds of friendship connect us to those who produce vegetables, flour, meat, and beer.
The rich flavors of wild boar, deer, Tuscan pecorino cheeses, and organic beach honey from the San Rossore Park create local, natural dishes. We serve delicacies like the Morelli platter and potato ravioli with Pisan mucco ragù, for fresh, festive dishes.
